White mousse Mohonk cake






Bottom layer

1 1/2 teaspoon white vinegar
1 cup cold water
1/3 cup vegetable oil
1/3 cup cocoa powder
1 cup sugar
1 teaspoon baking soda
1 1/2 cups all purpose flour
3/4 teaspoon salt
1 tablespoon vanilla

Add all liquids. Add all dry ingredients. Mix them on low speed with a whip until moistened. Scrap bowl and whip on high speed for about 2 minutes. Pour in a pan and bake at 350F for about 25-35 minutes. Cool.

Top layer

1/2 pound of white chocolate
2 cups of heavy cream
3 leaves of gelatin softened in cold water
1/4 cup of milk
(1-2 tablespoons of fresh strawberry puree - optional)

Melt chocolate and keep warm. Whip cream just under soft peaks. Squeeze out gelatin leaves, add milk, and melt until very warm. Add this gelatin mixture to melted chocolate and mix until smooth. Add about 1/3 of whipped cream into the chocolate mixture, stir and after that add the rest of the whipped cream. Pour everything onto the baked bottom layer of the cake and cool for a few hours in the fridge.

В этом месте (Mohonk) отдыхали друзья и смотрели презентацию у крутого французского шеф-повара по шоколаду. Записали этот рецепт и поделились со мной. Восхитительно! Делала на ДР малыша, улетел, ничегошеньки не осталось на утро к чаю. Гости все просили добавку за добавкой :)
